  • 350gms bread flour
  • 10gms caster sugar
  • 6gms salt
  • 6 gms dried yeast
  • 167 mls water
  • 100mls olive oil


  • 20mls olive oil for brushing the dough
  • 80gms blue cheese crumbled
  • 40gms cheddar cheese grated
  • 1 large pear thinly sliced
  • 30gms rocket leaves


1.Grease and line a baking tray

2.Preheat oven to 210

3.Combine dried yeast and warm water in a small bowl and mix till dissolved

4.Mix bread flour, sugar and salt in another bowl

5.Add dissolved yeast, olive oil and mix together to form dough

6.Knead the dough on a lightly floured board for approx 10 mins

7.Knead till the dough forms smooth dough

8.Place in a greased bowl and cover

9.Stand in a warm place till dough doubles in size (45 to 60 mins)

10.Turn dough onto a lightly floured board

11.Roll into a long oval approx 1 cm thick

12.Transfer to a baking tray, cover and stand in a warm place for 30 mins

13.Brush dough with olive oil

14.Press fingertips into dough to create indents

15.Sprinkle cheddar cheese on top

16.Bake 10 mins

17.Remove from oven and arrange pear on top

18.Scatter blue cheese over the top

19.Bake for further 15 mins until the edges are brown

20.Garnish with fresh rocket leaves
