Ingredients
21gms active dry yeast
1/4 cup whole milk warmed to the touch
500gms bread flour
1 tablesp sugar
2 teasp salt
100gms unsalted butter, cut into 1 cm cubes
7 large eggs at room temp
1 extra lightly beaten
Method
To Make Brioche
- Preheat oven to 220C
- Combine yeast, warm milk and sugar in a jug.
- Set aside for 5 to 10 mins till frothy
- Sift flour and salt into a bowl of an electric mixer
- Add yeast mixture and eggs
- Stir slowly with the paddle attachment for 3 mins
- Add butter, 1 cube at a time while this is beating
- Increase mixer speed to medium and continue stirring for 5 mins
- Continue till dough is stretchy& smooth. Dough seems more like a batter than a dough
- Transfer dough to a clean bowl and cover.
- Leave in a warm draught free place till doubled in size for up to 2 hours
- Deflate dough by lifting it and letting it fall into bowl
- Divide into 12 portions
- Divide each portion into 3 balls
- Place all 3 balls into hole of a muffin pan
- Cover pan and allow to rise by half
- Brush with beaten egg and bake 15 mins till golden
