21gms active dry yeast 

1/4 cup whole milk warmed to the touch 

500gms bread flour 

1 tablesp sugar 

2 teasp salt 

100gms  unsalted butter, cut into 1 cm cubes 

7 large eggs at room temp 

1 extra lightly beaten 


To Make Brioche 

  1. Preheat oven to 220C 
  1. Combine yeast, warm milk and sugar in a jug. 
  1. Set aside for 5 to 10 mins till frothy 
  1. Sift flour and salt into a bowl of an electric mixer 
  1. Add yeast mixture and eggs 
  1. Stir slowly with the paddle attachment for 3 mins 
  1. Add butter, 1 cube at a time while this is beating 
  1. Increase mixer speed to medium and continue stirring for 5 mins 
  1. Continue till dough is stretchy& smooth. Dough seems more like a batter than a dough 
  1. Transfer dough to a clean  bowl and  cover. 
  1. Leave in a warm draught free place  till doubled in size for up to 2 hours 
  1. Deflate dough by lifting it and letting it fall into bowl 
  1. Divide into 12 portions 
  1. Divide each portion into 3 balls 
  1. Place all 3 balls into hole of a muffin pan 
  1. Cover pan and allow to  rise by half 
  1. Brush with beaten egg and  bake 15 mins till golden
