Asian Coleslaw

Ingredients
  • ½ cabbage very finely sliced
  • 1 small red capsicum finely sliced
  • 1 small green capsicum finely sliced
  • 3 whole stalks celery including leaves finely sliced
  • 1 large carrot shredded using a julienne shredder
  • 1 cup finely chopped shallots
  • 1 tablesp finely chopped coriander
  • save a few whole leaves for garnish
  • ½ cup finely chopped flat leaf parsley
  • 1 cup mayonnaise
  • ½ cup white sugar
  • ½ cup buttermilk
  • 5 tablesp lemon juice
  • 3 tablsp white vinegar
  • 1 teasp salt
  • ½ teasp pepper

Method for Dressing Combine mayonnaise, white sugar, buttermilk, lemon juice, white vinegar, salt and pepper Shake vigorously Set aside till required for use
