Aussie Beef Pies

Ingredients
  • Ready prepared pie shells
  • 1 packet puff pastry for tops
  • 1 kg minced beef
  • 2 rashers bacon finely diced
  • 2 onions finely diced
  • 1 carrot finely diced
  • 2 large potatoes finely diced
  • 2 tablesp parsley finely chopped
  • 1 cup frozen peas
  • 1 x 440gm tin diced tomatoes
  • 2 teasp mixed herbs
  • 1 tablesp plain flour
  • 1 egg and 1 tablesp milk combined in a cup

Cook bacon in a pan

Add onions, carrots and potatoes and cook for 5 mins

Add mince and brown well

Add tomatoes and cook for a further 15 mins

Mix plain flour with a little water

blend till all lumps are removed and use to thicken pan juices if required

Place spoonful of the mixture into pastry shells

Cut circles of puff pastry to fit tops of pie shells

Moisten edges of pastry cases with egg and milk mix

Place tops on pies and ensure that edges are sealed

Brush with egg and milk

Cook at 200 degrees till pastry is nicely browned
