Place mushrooms in a heat proof bowl
Cover with boiling water and soak for 15–20 mins
Combine soy sauce and chilli in a bowl
Drain mushroom and chop very finely
Combine chicken, mushroom, water chestnuts, peanuts, shallot, garlic and hoisin sauce in a bowl. Use your hands to combine well
Place gow gees on a clean work surface
Spoon 1 teaspoon of mixture into the center of a wrapper.
Brush edges with water
Pinch edges together to enclose filling
Steam till cooked
Serve with chilli and soy sauce mixture.Garnish with shallot
