Preheat oven to 160C
Melt the butter and sugar together in a large pot on low heat.
Take off the heat as soon as it is melted and add the vanilla extract.
Mix in the eggs and then the dried ingredients.
Add the chocolate bits or cherry ripe chunks.
Bake in a lined 23cm square tin for 45–50 minutes
Leave to cool in tin.
Once cool slice and dust with icing sugar.
Serve with coffee or tea.
