Preheat oven to 180C
Cream butter and sugar till soft and pale
Beat in egg and ginger
Fold in dry ingredients
Mix into a soft dough
Form into 2 discs, wrap in clingfilm and rest in fridge for 30 mins
Sprinkle surface with flour
Roll disc to 5 mm thickness
Cut into shapes, dipping cutter into flour as you go
Keep the scraps from the first disc and mix into the next disc
Roll and cut the next disc
Place on baking trays
Bake in oven till pale gold, approx 8-12 mins
Remove from oven and leave to cool
Gild or decorate each cookie
