Dried Fruit Health Slice

Ingredients
  • 1 cup dried fruit salad diced
  • 2 cups dried apricots diced
  • 1 cup dried apples diced
  • 2 cups freshly squeezed orange juice
  • 1 pkt slivered almonds
  • 1 cup wholemeal plain flour
  • 1 ½ cups rolled oats
  • 3 tabs butter
  • ½ cup low fat yoghurt
  • ½ cup soft brown sugar
  • 2 teasp cinnamon

Place dried fruit in a saucepan with orange juice and bring to boil.

Cover and let simmer for 5 mins

Add half the almonds and set aside

Line 28cm x 20cm baking tray with paper

In a bowl combine flour, oats cinnamon and sugar

Rub in margarine followed by yoghurt to form a crumbly base

Press the base into a tray using the back of spoon or wet hands

Pour fruit mix over the base and sprinkle with remaining almonds

Bake in a moderate oven for about 40 mins

Allow to cool in tray then slice

This slice will keep for 5 days in an airtight container
