Gingerbread (kim’s Recipe)

Ingredients
  • 525 gr SR flour
  • 150gr plain Flour
  • 1 tbs ground ginger
  • 2 tsp ground cinnamon
  • 1 cup firmly packed brown sugar
  • 185 grams butter chopped
  • ½ cup golden syrup
  • 2 eggs lightly beaten
  • ¼ cup pure icing sugar

Combine flours, ginger, cinnamon, sugar and butter in a food processor. Process until mixture resembles bread crumbs

With motor running add egg mixture and process until dough just comes together

Turn onto a lightly floured surface and knead gently until smooth.

Cut dough in half and wrap in plastic wrap. Refrigerate for at least 4 hours.

Roll dough to a 5 mm thickness, cut and bake at 180 C  15 mins
