Lorna’s Anzac Biscuits

Ingredients
  • 2 cups SR flour sifted
  • 2 cups sugar
  • 2 beaten eggs by hand
  • 2 cups rolled oats
  • 2 cups dessicated coconut
  • 2 tablesp golden syrup
  • 250gms unsalted butter – melted
  • 1 tsp Vanilla

Preheat oven to 160c

Melt butter and syrup in a saucepan and add vanilla

Place all dry ingredients in a bowl

Make a well in the center and add melted ingredients and eggs and combine well

Roll into balls about 35g and place in 7.5 ring (egg ring is perfect)

Push down to flatten with coffee tamper on a greased tray

Bake biscuits in oven for 11 min or until they are brown

Turn tray around for an even bake
