Preheat oven to 150 degrees celcius
Beat butter and sugar until light white and fluffy
Sift and mix in the flours with a metal spoon till combined
pull mixture together by hand and knead very lightly
Cut mixture in half
Place each half into 2 well greased shortbread tins and press into tins
Pinch and crimp the edges with forefingers and thumbs to decorate.
Prick well all over with a fork. Cut each into 12 pcs
Bake until golden at 150C (approx 1 hour)
Recut on the original slice marks to make for easy removal. Cool slightly
Whirl the lever and take out of tins. Cool on trays
Sprinkle slightly with caster sugar and store in an airtight container
