Thai Chicken Cakes

Ingredients
  • 600gms Chicken mince
  • 1 tablesp massaman curry paste
  • 2 eggs
  • 1 tablesp fish sauce
  • 1 teasp palm sugar
  • 4 kaffir lime leaves finely chopped
  • 100gms green beans finely sliced
  • ½ cup finely chopped coriander leaves ground pepper
  • Ingredients for Dipping Sauce
  • 1 hot chilli finely sliced
  • 1 large clove of garlic finely grated or chopped
  • 1-2 tablesp sugar or to taste
  • 1 ½ teasp rice vinegar
  • 1 ½ tablesp lime juice
  • 1 ½ tablesp fish sauce
  • 1 ½ tablesp macadamia oil with lemon myrtle
  • 1 teasp finely grated ginger
  • 1 dessertspoon finely chopped chives and coriander

Preheat oven to 180o C

Place mince in a bowl

Add curry paste and mix through

Add eggs, fish sauce and sugar

Add beans, lime leaves, coriander and ground pepper and combine well

Use an ice cream scoop to scoop balls of mixture onto a greased baking dish
