Vegetable Spring Rolls

Ingredients
  • 2 shallots finely sliced
  • 1 carrot finely shredded
  • 1 red capsicum finely sliced
  • 1 cup cabbage finely shredded
  • 1 cup snow pea pods sliced
  • 1 cup bean sprouts
  • 2 red chilli chopped finely
  • 1 cup finely sliced water chestnuts
  • 1 cup softened rice noodles
  • 1 tablesp finely chopped ginger
  • 2 cloves garlic finely sliced
  • 1/2 teasp brown sugar
  • 1/2 teasp salt
  • 1 tablesp oyster sauce
  • 2 tablesp olive oil
  • 2teasp sesame oil
  • Combine the 2 oils to brush over spring rolls
  • 1tablesp cornflour
  • 2teasp water

Preheat oven to 220C

Combine all ingredients to make oyster sauce

Place 1 tablesp of vegetable mixture into one corner of defrosted spring roll wrapper

Fold the 2 sides to the middle Roll into a cylinder shape

Brush with water and cornflour mixture to join the spring roll

Place on a tray lined with baking paper

Brush each roll with oil mixture

Bake with joined side up for 10 mins

Turn and brush with oil again

Bake a further 10 mins till brown
